Plant designed according to the E.C.C. standard (directive 89/392/ and following) it is composed of:
– Cylindrical cheese vat, with vertical axis and flat bottom for the production, the cutting process and emptying of especially delicate curds. Insulated vertical wall. Double bottom heating by steam with internal pressure less than 0.1 bar. All the vat parts as well as the structural framework are made of AISI 304 stainless steel.
– Wire protection net for tools changing.
– Flanged connection for the steam line.
– Condensate recovery flanged connection.
– One flange for curd discharge system.
– Stirring and cutting process device composed of a speed gear reducer with crown wheel and a double-paddle (for stilling) or double special cutting device (for cutting) and of a support frame bolted to the vat’s upper rim. The variable speed gear reducer permits continuous regulation of the stilling and cutting process. The unit is equipped with a protection carter.
– Support and lifting device made up of three hydraulic cylinders connected to the vat at an angle of 120x and completely protected by telescopic carter made of AISI 304 stainless steel. Chrome-plated rods.
– Sealing unit with curd fines remover.
– Hydraulic power box guarantees perfect positioning of the vat during the raising and lowering stages: during the raising stage, the vat gradually begins to tilt toward the drainage outlet so as to facilitate the emptying of the curd.
– The hydraulic power box has a tank, solenoid valves and accessories to assure a perfect operating process.
– One oil-pressure circuit equipped with a manual pump and one cylinder for vat slope towards the discharge point.
– Two blades made of stainless steel AISI 304 for stirring.
– Two standard tools for cutting made of stainless steel AISI 304 equipped with wires and pre-arranged to the insertion of a new shovel.
– Electric power and control panel consisting of a stainless steel AISI 304 cubicle with column, ip54 protection, on which are mounted:
– Electronic regulator for the pasteurisation temperature type with PID regulation and set point.
– Temperature indicator, electronic type.
